So when someone really wants color grading and get the most out of their camera, they will need to spend a lot more time in the edit suite to make the colors look good again. The color is there in the video but you need to bring it back. The only issue that comes with using Log profile is, that you have to color correct it afterwards because it looks very flat and desaturated (it gives the appearance of being close to black and white). This means you will not lose as much detail in the dark shadows and bright highlights. If you aren't aware of what Log is, then in simple terms, Log is a color profile that allows the cameras sensor to capture a higher dynamic range of light. So Canon have their own Log color space called Canon C-Log.
